Free Recipe Friday - Baconwiches & Hot Apple Syrup

Thought I'd post a breakfast food (although we usually have the big breakfast foods for dinner... so it's kind of a dinner recipe anyway). This is a yummy take on French Toast. I think my mom got it from a 70s cookbook or something.

Baconwiches & Hot Apple Syrup
8 slices bacon
2 slightly beaten eggs
¾ cup milk
¼ teaspoon salt
8 slices bread
Hot Apple Syrup

In skillet cook bacon till crisp. Drain bacon; reserve drippings. Combine eggs, milk, and salt. Dip bread in mixture; fry in drippings till brown. Crumble bacon over toast, top with Hot Apple Syrup.

Hot Apple Syrup
In small skillet melt ½ cup apple jelly and 2 tablespoons butter with 1/8 teaspoon ground cinnamon; stir till smooth.

--I usually add some vanilla and cinnamon to the egg mixture. And I just mix the hot apple syrup in a glass measuring cup and melt it in the microwave. It is yum yum yummy!
